crockpot fun

Today I tried a recipe I found on http://365daysofcrockpot.blogspot.com/. It was Asian Chicken Barbecue, and it was easy and yummy! Here is the recipe:

Asian Chicken Barbecue
2 pounds Tyson boneless, skinless chicken thighs tenders (don't use chicken breasts) (I actually did use thin chicken breasts)
1/2 cup soy sauce (I used a low sodium soy sauce)
1/3 cup packed brown sugar (yum!)
2 tbsp sesame oil (I used canola oil--that's just what we had)
3 cloves garlic, minced (I used 3/8 tsp garlic powder)
I also added about 1/2 cup water to dilute the soy sauce. This was totally a personal preference.

Place thighs into the bottom of a slow cooker. Lay as flat as possible. Combine the rest of the ingredients in a small bowl. Pour sauce over the chicken. Cover and cook on Low for 2 hours. Turn chicken over and cook 1 hour longer. Serve. I served it with rice and spooned the sauce over the rice. Yummy!

Also, I discovered that you can cook brown rice in the crockpot! 1 cup rice + 2.5 cups water + 3 hours on low = cooked rice!
